Quick supper in busy days

Hi friends

I am exhausted! The workload has gone bonkers and it had been non-stop, skipping lunch twice or three times.
Next week should be the same. Working for long hours every day and one professional seminar in the evening on Thursday. As I look absolutely awful, I need Mary’s facial treatment on Friday.

My friend JL asked me to put the photos of my dinner during “weekdays”. Here they are. They look absolutely terrible, don’t they? Oh dear.
Here’s my pathetic excuse. As I had been extra busy, I had no energy to cook nice meals after work this week. Rice is easiest for me to cook as I have a rice cooker with a timer.

Rice with edamame beans. Chicken with teriyaki onion sauce. Miso soup with tofu and enoki mushroom .

Risotto with green peas, asparagus and onion.

Chili sauce (onion, enoki, and whatever is left in a fridge) and rice.

The glass in the back is water and a Vitamin C soluble tablet. It is not the best solution to maintain my immune system, but when I don’t have time, it is sadly the best alternative available to me. Thanks to these tablets, I did not catch flue in winter.
