Homemade Pan Pizza

Hi friends,

It is my poorest day of the month before the pay day and I found that there is only a small block of cheese in the fridge.  Oh dear.

This is my simplest homemade pan pizza.

You will need 100g strong white flour, pinch of salt, 1 tea spoon of sugar, 1.5 spoon of baking powder and 100cc of water.

Mix the above ingredients and stir well until it becomes very smooth. Place baking paper onto a tray.
Pour the mixture onto the baking paper. Spread ketchup (preferably pizza sauce) and sprinkle grated cheese on it.

Place the tray in the pre-heated oven. Bake it at 240C for 13 – 15 minutes.
This is a very easy yet great menu for one person, especially when one is suffering from serious poverty…

Granola Rock Cakes

Ever-fantastic M was with me and he has just gone home as he is working tomorrow whereas I am having one more day off and will be back to the office on Wednesday.

He left this with me.
To be honest, I don’t eat cereals as you might have noticed thorough the old posts. However, this is a good brand and I don’t like wasting any foods. I decided to made something using granola.

Here we go, my dear ladies and gentlemen, Juno’s special rock cakes with granola.

Put 80g of Soya Spread (or butter) and 30g (or even less) of brown sugar in a bowl and mix them up until it becomes very smooth. Stir egg white (no need to whip it up) and pour it into the bowl gently. Keep mixing until it becomes smooth again. Then, add 200g of flour, 3 tea cups of granola, half tea spoon of baking powder, and 3 drops of vanilla extract (optional).

Then mix up quickly and it will be like this.

Place a baking sheet on an oven tray. Place golf-ball sized spoons of the mixture onto the baking sheet and put the tray in the oven.

Bake them at 180C for 15 minutes or until they become golden colour like this. 

Breakfast and Hot Cross Buns

Hope you are enjoying the last day of Easter holiday.

As usual, Stratford-upon-Avon and Cotswolds villages are No-Go zones on bank holiday Monday. Instead, I went to the nearest garden centre to get petunias to make hanging baskets for summer.

When I was queuing at a till, my colleague spotted me and we had a very quick chat. Like myself, she is in her 40s – a couple of years younger, if I remember correctly -  and we used to work for the same department. I am still in the same place but she moved on and has become a part of product development team. She was with her new husband and a little baby girl. She looked absolutely stunning and happy and that made me very pleased.

She is genuinely a caring lovely person. Always takes time for people around her.
After all, we all get what we deserve and on that ground, she certainly deserves her gentle looking nice husband and a beautiful angelic baby.

And this is what I deserved this morning. As I forgot major supermarkets were closed on Easter Sunday, I did not have anything fresh and this is the best I could make.

Then, who can spend Easter without hot cross buns?

I love toasting them and putting some soya spread.

Yummmm…..

Frozen - Prince Cheating

Hi friends,

Have you watched this? It is Disney’s latest film – FROZEN.

It was a good light entertainment for Easter holiday. You can Google the storyline of this film, so I shan’t bother you with every single detail.

What made me smile is, Disney knows how the life has changed. It is not a usual “a beautiful princess being rescued by a handsome prince and they get married and lived happily ever after” story. A princess punched a cheating prince! Hooray!

In these days, if we are waiting for a prince charming, we have to wait for him forever or end up with a price cheating.

Girls must be two things – fabulous and classy.

Yes, we should feel fabulous about ourselves regardless whom we are with or without, then, the rest will follow.

PS: A mountain man Kristoff reminded me of Russian Skating King Evgeni Pulshenko. I like Pulshenko, he is great fun to watch….ladies, enjoy. ;-p

In these days...

Hi friends,

It has been bit chilly but surprisingly sunny in these days. Hope you are having a good Easter break.

I had been suffering from so-called delayed shock and was depressed from time to time, but I am OK, no worries. Although I am still limping, I am in one piece. No worries.


My breakfast in these days. See? I have not lost my appetite, so I should be OK. I will spend my Easter holiday licking my wounds….
